Futsushu

This category of sake represents every day drinking sake known for value and drinkability. The point of Futsushu is to make the best tasting sake for the best value, and this means that there are no governmental designation rules to guide this segment. Futsushu sake means that a brewer uses their most affordable brewing or even food consumption rice usually blended with “brewer’s alcohol” to keep costs down. Typically 80% of the sake market is made up of this Table Sake to be enjoyed while in transit on trains, subways in glass one cups, in cans, or in large bottle formats for every day consumption. Large sake breweries make the lion’s share of Futsushu, but many small breweries produce this category as well, and to be honest they are very good as well as affordable. Usually, Futsushu is enjoyed chilled, but then again it often lends itself to warming as well, so consider this segment of sake a “comfort sake.”
