Housui Yamahai Tokubetsu Junmai Cup "Old Mountain"

"Old Mountain" is a direct descendant from Japan's oldest brewing traditions. Yamahai starters require careful attention and extra time to develop. Made with Kyokai Yeast #7 as well as Tamasakae rice milled to 60%, the resulting sake is layered and complex with a dry finish. Rich, with cereal rice mash flavors. The Yamahai tang adds backbone and texture, softened by notes of warmed honey.

Food Pairings: Chilled soba noodles, tuna tataki, chicken yakitori, sourdough grilled cheese sandwich, radicchio with olive oil, capers and lemon.
