The nose on this unpasteurized Nama is a vivid collection of pear, mango, papaya, cherry, strawberry and pineapple aromas that are prototypical “Ginjo-Ka.” There was a day when there was not a lot of Junmai Daiginjo Nama Genshu available in the US. Not any more, as there are a lot of these fresh and premium brews, but none at this price point! Fresh, frisky, bright, lively, crisp, and tingly, this sake drinks with excitement and elegance. Look for pear, apple, strawberry, papaya, cherry, and star fruit, with a tingle of umami, and a white pepper and mineral finish. This is happy sake that is bright, lively, and very expressive.
