The nose on Mei’s favorite Spring Nama that is undiluted aka Genshu and uses a peach yeast is an impressive collection of grape, lavender, peach, honey, vanilla, veggie, pear, powdered sugar, and mineral water aromas. Soft, silky, rich, round, fluffy, and with a medium body, this special sake drinks lively and comfortable. Look for applesauce, ripe peach, sweet rice, cream puff, powdered sugar, sweet tomato, and pear candy flavors that dance with a very slick umami vein that opens up as the sake warms in the glass. This is one of those Namas that you can isolate and taste the water in each sip. Definitely a fan favorite. The nose on this unpasteurized seasonally released sake is a great collection of strawberry, orange, pear, powder sugar, peach stone, ginger, and sugar cookie aromas. What a great tasting Spring Nama sake! Round, crisp, sticky, semi-fat, and very smooth, this brew is slippery and very lively. Made with a rice varietal named Akihikari milled to 58%, and using a white peach yeast, this bright and exciting sake is a staff favorite. Look for tangerine, rock sugar, lemon lime, green apple, orange sherbet, and mineral flavors on an enjoyable flow.
