The nose on this popular Nagano “nama” or unpasteurized seasonally released brew is a bright collection of peach, Muscat, cinnamon butter, green apple, grilled pineapple, blueberry, honey, pear, and cookie dough aromas. Crisp, lively, fresh, and fun, this brew drinks with light spritziness, zestiness, and friskiness for a delicate fizzy mouth-feel that is refreshing and layered. Look for berries and cream, melon, rock sugar, sugarcane juice, toasted rice, Hawaiian rolls, Asian pear, brioche, fresh herbs, flavors that conclude in a mineral water finish that is uplifting and bright. The nose on this seasonally released, unpasteurized (nama), and undiluted (genshu) sake is a very interesting collection of peach, blueberry muffin, berries, fig, peach, Muscat, seaweed, and grassy aromas. Talk about sticking your face down in a freshly made vat of sake and taking a big ol' sip. This is fresh and vivid sake that is spritzy, crisp, zesty, bright, mid-bodied with a silkiness to it that is odd for such a fresh and brash brew. Made with Hitogokochi rice and two bright yeast types, look for peach, persimmon, Concord grape, nectarine compote, herbs, banana bread, strawberry, molasses, blueberry yogurt, and some lively umami flavors that drink with a little tannin-like dryness, so red wine fans take note.
