The “Beau-Zone” Layer – Dan Bizen Omachi
I’d like to start this Beau-Zone Layer with a HUGE “Thank You” to the UK sake superstar Erika Haigh, who introduced me to this sake two years ago in her awesome sake bar in London. I was with Michael Tremblay and we tasted this Dan at her counter and we were blown away! So without international sake chemistry, this brew would not be available in the US right now. And in this regard, without the outstanding Tokuzo Takahashi and Nick Matsumoto aka Sakemen WHITE and RED from Kuramoto US Inc and JFC; this outstanding Bizen Omachi Yamahai Junmai Ginjo Muroka Nama Genshu would only be a dream in London. With the help of Chris and Mei we managed to corral this brew as one of our own True Sake Selection (TSS) sakes that is EXCLUSIVE to True Sake (and several select restaurants).
Look at all of that sake magic, from a sake bar in London to some wrestling-masked sake savants to you. This is one of the most fun sake voyages in our history and the destination is one of the most amazing Namas that you will ever taste. Using Bizen Omachi milled to 55%, Sasaichi Shuzo has made a brew that has an SMV of +/_0 with an acidity of 1.9 and a 15% ABV that is a liquid wonder and a brew for the ages. They use special water from Mt. Fuji that is used for the Emperor’s tea ceremony to this day.
In general, Nama or unpasteurized sake has a certain pop or freshness that makes it drink a little more vivid or 3-dimensional than typical pasteurized sake. But not all namas are alike and Dan is the proof in the pudding. First and foremost it is a Yamahai, and that should be the thing that makes this a “different” type of brew, but there is so much more. So much! And that is where the magicians at Dan can tip their hat because this brew is frisky, juicy, slippery, tingly, lush and lively and just very different, but oh so delicious. It sides on the semi-sweet side, but the high acidity and maybe the luxurious water used, it drinks more light and fluffy than sweet, so the overall drinking experience is lush umami goodness.
