How much fun is the creativity in sake today? Look at all the expressions and new brews that are made using new techniques, styles, etc. There has been an explosion in the last 5 years, and when we started this gig 22 years ago, who would have thunk, that one brewery tried to make a sake that would boost the flavor of sushi? That’s exactly what has happened at Hokkaido Prefecture’s Otokoyama Sake Brewery.
- “Supervised by sushi chefs in Japan – As a sake for sushi, it was supervised by the Youth Department of Hokkaido Sushi Commercial Life Sanitation Association, which has 300 sushi restaurants. A total of about 50 sushi chefs actually participated in supervision. We held blind tasting sessions by sushi chefs many times, and commercialized the ones with the highest ratings.”
- “Comments from supervised sushi chefs – clean and crisp finish, we can feel the sweetness of the rice in the aftertaste. Moderately fruity and easy to drink, refreshing and good balance (acquired taste), dry and delicious.”
Look, if the Hokkaido Young Sushi Chef Group says this is the brew for your sushi experience, who are we to say no? The feature that I agree on the most with their review is that it is easy to drink, and I think the abundance of umami makes it rock with the fish. It is a concept sake that works conceptually, and I almost made it my Turkey Sake (Turkey Booster) so it definitely goes with other proteins. And the price is nice for this bottle of rice!
