Does COVID-19 have any silver linings? Not many I’m sure, but there is one that you should enjoy. Because many restaurants had to close down operations during the pandemic, they obviously couldn’t sell sake. This meant that a lot of sake that had been ordered well in advance, could not be sold. The result is several “Restaurant Only” sake importers approached us to introduce their sakes to the retail market. The legendary Fukukomachi brewery in Akita makes excellent sake including this Tokubetsu Junmai, which is a superb sake to explore to learn a little bit more about how water “tastes” within a sake. Since the final product of sake is 80% water it’s always fun to be reminded of that fact, as you taste a brew that also has so many other wonderful flavors, including a ton of umami. Akita Prefecture is known for sake that has long flavors that pair very well with food, and for sure this brew is also great warm. Take a chance on this Silver Lining sake.
