In the boxing world you have the slogan “the pound for pound champion” for this or that division. The same can be said for a few sakes in the sake world. This Junmai Ginjo from Yuki no Bosha is one of my pound for pound great sakes, because not only does it kick ass it also teaches you so many different aspects about sake in one glass. For example the acidity of this sake is quite high and it is that way for a reason. It counter balances the low (sweet) SMV and fruitiness to make the sake drink more even and flavorful without being flabby or cloying. It is also very wine-like in this regard and reminds us that sake has typically 1/3 the acidity of wine and so this brew is super appealing to wine drinkers. It is also a lesson in laying down sake for a year after production to make the sake rest and relax, which is what the “Limited Release” on the label means. This sake and the other brews at Yuki no Bosha are so good – (they have my favorite toji in sake) – that they almost ran out of “juice” last year. So enjoy a lesson in a glass and let this pound for pound sake kick your ass!
