This special Trilogy offering through our friends at True Sake is so enticing and intriguing. To take the opportunity to open three bottles of IWA is quite frankly, the ultimate extravagance, no doubt.

IWA Assemblage 4 (2022) is more in the direction of Japan – white aromatics with a sense of great fluidity and dynamics and yet juicier and joyful. To be enjoyed with fish, fruit and vegetal.

IWA Assemblage 5 (2023) is a counterpoint. I have been making it more dramatic. More structure and depth. Subtle, silky tanins. Somewhat more in the direction of wine, without mimicking anything.
